I know Kombucha was taken off the shelves (not recalled, just for labeling issues b/c it has small amt of alcohol). I can't find it ANYWHERE in Lafayette. Does anyone in Baton Rouge or New Orleans have it??? I know Whole Foods isn't carrying it either..... :( until the label issue is resolved. Does anyone on here make it? Jennybean |

the fda is involved, hasn't done a full-on recall, but they are investigating the alchohol content of kombucha drinks. i'm out in washington state at the moment, and i can't find any kombucha drinks here either. if you google kombucha and FDA, you should find lots of information and opinions. regardless, i miss it, and hope it comes back soon! |

I took a fermentation class a few weeks ago from a lady who makes a lot of different fermented foods at our farmer's market. It was very interesting, but I prefer the method I found on this website. It is very easy to grow your own SCOBY from a bottle of store bought Kombucha or you can get one from a friend. Every other batch produces a baby SCOBY which can be passed on or thrown away. Some people prefer a brew from the mother while others prefer one from the baby. I like this double fermentation method because I think the juice gives a good flavor. It is very refreshing for these hot summer days.
It takes 5-7 days to brew a batch, but it is very little actual labor involved. Really less than 30 minutes total. |

I can't believe we didn't have enough time to chat about this today! So funny how you and I run into the same things at the same time :) Like knitting, etc. and now kombucha!
Y'all, I have had some...ahem....serious digestive issues for a few months. Nausea, constipation, diahrrea, it was horrible. Let's just say that only ONE bottle of Kombucha taken over two days solved my problem!!!! It was a miracle for me and I want to keep up with it for general health. I can't believe I didn't start drinking it regularly after that. But when I was visiting some friends in OH a few weeks ago (they drink it too), they said they were taking it off the market b/c of labeling issues, turns out when bottled, the alcohol content is minute, but the longer it sits on the shelf it still ferments a bit, and although the amount is still miniscule, I think around .5%, it caused a labelling problem. I also want to have my boys drink it, but it can be an acquired taste. I hope to make some yummy tasting stuff for them. I would love to get some SCOBY from you Marie. Ever since I learned they were going to take off the shelves, I have been looking for it to make my own from that. But when I started looking it was already gone :( But since you have it....that would be fun! I just need to get some jars. I do have bowls but for me that just spells messy disaster. You can also do a continuous brew. You get a sun tea jar with the spout at the bottom, make the sweetened tea and add the SCOBY. You just keep adding tea as it gets depleted and it continuously brews.
Let me know when you are ready for the Scoby, Jenny. |
